Mini Chicken Burritos

Ingredients
​16 Corn Tortillas
1 cup Chicken, cooked and chopped
1 small can Green Chilies, mild, chopped
½ cup Salsa
½ cup Sour Cream
1 cup Vegetable Oil
1 cup Salsa for dipping

Details
  • Level: Easy
  • Serves 6 guests
  • Time: 30 minutes
Instructions
  1. On a plate microwave tortillas for 1 minute to make them pliable
  2. In a medium bowl mix together chicken, chilies, salsa, and sour cream to make filling
  3. Add filling to a tortilla with teaspoon. I like to lay them all out and make sure they all get the same amount before I start rolling.
  4. Roll each tortilla making sure that filling doesn’t go all the way to the ends
  5. In a large fry pan heat oil over medium high heat
  6. When oil is hot, Lay burritos in oil ending flap side down. Brown each side, turning only once.
  7. Remove to paper towel to remove excess oil.
  8. Serve and enjoy. I cut mine in half so the filling shows. I also serve these mini burritos on a plate of shredded cabbage to look pretty and to maintain its crispness.

Melted Chocolate

Instructions
  1. Place chocolate chips in a microwave safe bowl 
  2. Microwave for 1 minute then stir
  3. Put back in the microwave for 30 seconds then stir
  4. Again put back in the microwave for 30 seconds then stir
  5. Return to microwave for 10 seconds and stir
  6. Keep repeating until chocolate is smooth
  7. Note: Chocolate burns easily so make sure you follow this pattern​

Croque Monsieur

Ingredients
  • 2 slices quality French Bread, sliced ½ inch thick
  • 2 teaspoons Dijon Mustard
  • 12 ounces Apple Smoked Ham, sliced thin
  • 2 cups Gruyere Cheese, shredded
  • 2 tablespoons Butter
  • 1 glass of your favorite White Wine for sipping while you cook
  • ¼ cup Butter
  • ¼ cup All-purpose Flour
  • 1½ cups Whole Milk
  • ½ Yellow Onion
  • ½ teaspoon freshly grated Nutmeg or ¼ teaspoon ground Nutmeg
  • Kosher Salt

  • Serves 2 guests
  • Cooking time about 25 minutes
  • Cooking level… Easy!​
Instructions
  1. Preheat broiler to high
  2. Spread mustard inside of the pieces of bread and butter on outsides
  3. Place meat and 1/2 cheese inside and form sandwich, then set aside
  4. In a large fry pan, over medium heat, cook bacon to release fats
  5. In a small sauce pan over medium high heat place butter and flour, stirring until it starts to just see tan color then quickly stir in milk
  6. Add onion half and allow to move around while stirring
  7. Stir about 3 to 4 minutes until to desired consistency. Should be thick like melted butter
  8. Remove from heat and remove onion to discard
  9. In a fry pan toast sandwich on both sides
  10. On a cookie sheet place toasted sandwich and spread cream sauce (béchamel) on top
  11. Top with remaining ½ of cheese
  12. Broil until cheese bubbles. Only a minute or two
  13. Serve with your favorite white wine and enjoy

Winter Essential Hot Toddy

  • 8 oz Boiling Water
  • 4 oz your favorite Whiskey
  • 2 tablespoons Lemon Juice
  • 2 teaspoons Honey
  • 1 teaspoon Sugar

Mix ingredients and serve
