Make Ahead Baked Potato Salad

Ingredients
  • 6 medium to large Potatoes, baked, cubed and cooled
  • 1/2 cup Butter, melted
  • ¾ cup Mayonnaise
  • ¾ cup Sour Cream
  • 1 cup Cheddar Cheese, sharp, shredded
  • ½ cup Bacon, cooked crispy and cut into small pieces
  • ¼ cup Chives, chopped
  • Salt and Pepper to taste​

Details
  • Cooking Level: Easy
  • Time: 15 min
  • Makes 6 servings
Instructions
  1. In a large bowl toss potato cubes and melted butter to coat well
  2. In a small bowl combine mayonnaise and sour cream mixing well
  3. Add sour cream mixture to bowl of potatoes and toss gently, mix well
  4. Add cheese, bacon, and chives and toss
  5. Season to taste with salt and pepper

Hot Dog Super Sauce

Ingredients
  • 1/2 cup Mayonnaise
  • ¼ cup Yellow Prepared Mustard
  • 4 Tablespoons Sweet Onion, grated
  • 1 Teaspoon fresh Tarragon, minced
  • Salt & Pepper to taste
Instructions
  1. Mix all ingredients in a bowl
  2. Serve it atop your favorite hot dog

IPA Battered Fish and Rings

Ingredients
  • 1 1/2 cup Flour
  • ½ cup Corn Starch
  • 1/2 teaspoon each Salt and Pepper
  • 2 or 3 bottles NARCISSISM IPA from Sumerian Brewing Co.
  • 2 cups Frying Oil (I like Olive Oil)
  • 2 pounds Cod, large chunks, no skin
  • 1 large Sweet Onion, cut into rings
  • ​1 fresh Lemon, wedged

Details
  • Cooking level… moderate!
  • Serves 4 guests
  • Cooking time: about 45 min
Instructions
  1. ​In a medium bowl mix in order: flour, corn starch, salt and pepper
  2. Coat rings and fish with flour mixture and let sit 20 minutes
  3. Slowly add beer to remaining flour mixture until it has consistency of a melted milkshake
  4. Reserve rest of beer to enjoy while cooking
  5. Heat oil in a heavy large fry pan to about 335 to 340 degrees
  6. When oil is to temp, stir batter again and add onion ring one at a time fully coating with batter
  7. Shake off excess batter and place in fryer a few at a time
  8. Fry until golden brown. Remove to plate with paper towel
  9. Once rings are finished hold in warm area (don’t forget to sip your beer)
  10. Repeat process with fish. Make sure center is at least 150 degrees
  11. Squeeze lemon wedge over fish then sprinkle salt on rings and fish

Raspberry Red Wine Popsicles / Granitas

Ingredients
  • ⅓ cup seedless Raspberry Jam
  • 1 tablespoon fresh Lime Juice
  • 1 ½ cups Red Wine
  • 1 ½ cup Lemon-Lime Soda Pop

Details
  • Cooking Level...Easy
  • Serves 6 people
  • Time: 20 mins, freeze overnight​
Instructions
  1. Melt jam over medium heat
  2. Add lime juice and remove from heat
  3. Let stand 10 minutes
  4. Add wine and soda and mix well
  5. Fill popsicle cups and freeze overnight
  6. OR pour into a deep sided pan and freeze overnight to make granita. Serve in a pretty glass.

Cheeseburger Salad

  • 1 pound cooked Ground Beef, large crumbles
  • 2 hearts of Romaine Lettuce, chopped
  • 1 ½ cups Grape Tomatoes, halved
  • ¼ cup Dill Pickles, chopped
  • 2/3 cup Cheddar Cheese, shredded
  • ½ cup Mayonnaise
  • 1 Tablespoon prepared Yellow Mustard
  • 1 Tablespoon Smoked Paprika
  • 1 Tablespoon Vinegar
  • 1 Tablespoon Pickle Juice
  • 1 Tablespoon Sugar
  • 1/2 teaspoon Salt and Pepper
  • 4 Gourmet Hamburger Buns, toasted and cubed
Details
  • ​Cooking level… Easy!
  • Serves 4 guests
  • Cooking time about 15 min
Instructions
  1. In a large salad bowl toss beef, lettuce, tomatoes, pickles, and cheese
  2. In a small bowl mix dressing- mayonnaise, mustard, paprika, vinegar, pickle juice, sugar, salt, and pepper
  3. Drizzle dressing on salad
  4. Top with cubed buns
