Warm Beet Salad

Ingredients
  • 4 Red Beets
  • 1 Naval Orange, peeled and sliced
  • 1 T Olive Oil for roasting
  • 1 T Olive Oil for dressing
  • ¼ c Walnuts, rough chopped
  • ¼ c Gorgonzola, crumbled
  • Salt & Pepper​

Details
  • Cooking level...easy
  • Serves 2 people
  • Cooking time...45-60 mins
Instructions
  1. Preheat oven to 425 degrees
  2. Wash and dry beets thoroughly
  3. Trim beets and slice
  4. Toss with olive oil
  5. Arrange sliced beets on a pan (not touching) and put into preheated oven
  6. Roast at high heat until you see color start to form and beets are tender to poke with a fork
  7. Let cool to warm or room temperature and place all ingredients in a bowl
  8. Toss lightly
  9. Add salt & pepper to taste​

this sounds amazing, but i don't believe for a minute there would be enough for 2 people. At least not if one of them is me...

I couldn't agree more with Roxanne! I have standard amounts that make up a portion and then there is chef's portion. When it comes to beets for me this may or may not be enough for me either. I love them!
